WHere is a simplified interpretation of a beverage found on a new menu. It's a party-sized pre-mixed that is bursting with essence of a festive period, making it excellent for your holiday party. Save the extra syrup you can use for morning drinks, sweets, or to make additional servings of the drink.

Yields 10 people
Ingredients for the Clementine Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
Ingredients for the Cocktail (produces 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Directions
Making the Citrus Syrup: Combine every items into a pan, heat until it reaches a gentle boil, agitating to dissolve. Then, remove from the stove and leave to reach room temperature fully. Pour into an sterilised bottle, cap it keeping it in the refrigerator, where it will keep for about a month.
To make Batch Mix: Pour all the liquid ingredients in a sizeable container, let it rest for one hour, then filter it , ideally through cheesecloth, making it fully clarified.
When ready to serve: Add 85ml of your premix to a mixing glass packed with ice, gently stirring gently for about 60 seconds until cold. Pour to a cold coupe glass or similar, decorate with the cranberries adding the final touch with a light spray of the essential oil above the glass.
